Tottenham Cake


250g Plain flour
1 tsp Baking Powder
1/2 tsp Bicarbonate of soda
250ml Plant milk
150g Caster Sugar
75ml Oil 
2 tsp Vanilla extract
200g icing sugar
3-4 tbsp of blueberry juice



Preheat the oven to Gas Mark 4 (180°C) and line a tray bake pan with parchment paper.


Mix the oil and sugar together and then stir in the vanilla extract and milk.


Mix the flour, baking powder & bicarbonate soda in a separate dish.


Use a whisk to combine the dry ingredients with the wet.


Pour the batter in to the pan and bake for 20 minutes or until a cake skewer comes out clean.


Place on a cooling rack to cool down completely before icing.


For the icing simply mix the icing sugar with the berry juice until it forms a thick consistency.


Spread the icing on top of the cake and allow to set before serving.
